M.B.Restaurant M.B is the signature restaurant at Abama Resort of the renowned Basque chef Martín Berasategui. Martín’s all-consuming passion for cooking began early in his life: he learned his trade at the age of 14 while helping out at the San Sebastian fish restaurant owned by his mother. Ten years later Martín’s own restaurant in Lasarte had earned its first Michelin star, and by 2001 he had brought that number to three - the highest accolade for any chef, and a tally he has maintained to this day. Kabuki Abama Kabuki, the Canary Island outpost of the Madrid-born Japanese fusion concept has been awarded its first Michelin star in 2012 based on the quality, mastery of technique, personality and consistency of its food.
Under the direction of 28 year old Executive Chef Daniel Franco this prestigious win positions Abama Golf & Spa Resort as the only hotel in Spain with two Michelin star-rated restaurants. This new accolade further strengthens Abama’s reputation for gastronomic excellence growing its Michelin stable, which includes seven Michelin starred Martin Berasategui’s M.B. restaurant.
Dishes at Abama Kabuki combine the elegance and technical style of Japanese cooking with traditional Canarian produce and dishes. This is evident in Franco’s Usuzukuri of Cherne fish where Usuzukuri cuts of local fish are served layered over the black potatoes of the Canary Islands together with the region’s signature ‘Mojo’ sauce.
Franco is also dedicated to the Slow Food and ecological movements ensuring that all produce (where possible) is sourced locally, supporting local farms and businesses, keeping food sustainable and organic, grown without the use of harmful synthetics and chemicals.
The Kabuki concept was launched by chef Ricardo Sanz in 2000 with Kabuki Restaurant in Madrid. The concept was a result of the chef’s creative culinary development of tapas combined with his training by Japanese culinary master Masao Kikuchi of the legendary Tokyo Taro Restaurant.
